Maple Brown Sugar Oatmeal Muffins

Ingredients

  • 2 cups quick oats

  • 1 cup milk (protein fortified as an option)

  • 1/2 cup Tap That Maple Syrup

  • 1/3 cup oil

  • 2/3 cup Tap That Maple Sugar

  • 2 eggs

  • 1/2 tsp maple extract

  • 1 1/2 cups all purpose flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • Chocolate chips (optional)

Instructions

  1. preheat oven to 400 degrees F.  Line muffin trays with liners.

  2. Combine oats and milk into a large bowl.

  3. Add maple syrup, oil, maple sugar, eggs and maple extract until combined.

  4. Stir in flour, baking powder, cinnamon, baking soda and salt until combined. Fold in chocolate chips.

  5. Divide batter into muffin liners and sprinkle sugar over batter.

  6. Bake for 18-25 minutes.  Let cool and enjoy.
